Creamy Buffalo Pasta

This is my first recipe post and I’m just going to start off with the ingredients and instructions because I’m always annoyed when I have to scroll through a full blog post to get to the essential information. One-Pot Creamy Buffalo Bow-Tie Pasta
Prep time: 10 minutes
Cook time: 25 minutes
Total time: 35 minutes

Serves: 2 people

Ingredients
– 1/4 cup chopped yellow onion
– 1 tbsp olive oil
– 1 tsp onion powder
– 1/2 tsp cayenne powder
– 1 can full fat coconut milk
– 1 cup vegetable broth
– 1/2 pound bow-tie pasta
– buffalo sauce (to taste)

Instructions
1. Chop or process 1/4 cup of yellow onion into small squares and add to a medium sized pot.
2. Add olive oil, cayenne powder and salt and pepper onto the onions, then fry until translucent.
3. Pour coconut milk and vegetable broth into the pot and stir.
4. Add in bow-tie pasta and, if liquid does not cover the pasta, add water until it slightly covers the pasta and stir.
5. Cover pot and cook on medium heat until sauce mixture is creamy and pasta is cooked (usually takes about 15 minutes).
6. Add a buffalo sauce drizzle to the top of each dish and serve.

Recipe Background

Before adopting a plant-based diet, I used to eat cheese-stuffed pasta AT LEAST three nights a week and smothered it in alfredo sauce (I know–super unhealthy). As soon as my husband convinced me to take on the challenge of going vegan, I knew I needed a good meal substitute.

Immediately following that shift, I began some intense recipe research. Enter the “vegan alfredo” Google search that led me to my first experience cooking a plant milk pasta sauce. I swear it was like a light switch on in my head via my taste buds when I realized how easy and delicious this type of meal is to make and enjoy. It didn’t take long for me to start experimenting with different variations with my buffalo version being one of the first to surface.

I took an original garlic-based recipe and turned it into a slightly spicy dish that gives a bit of a kick. Though any ingredient can be adjusted, I prefer what’s listed above. I go for Texas Pete Buffalo Sauce, though any buffalo sauce works. I also have a ton of vegetable bouillon cubes to use for the broth as opposed to buying it as the liquid itself.
